These keto peanut butter protein macaroons are a great treat when you need something sweet. Packed with healthy fat and protein without all the cheap carbohydrates found in other sweets.

Keto Peanut Butter Protein Macaroons


  • 3 cups unsweetened shredded coconut
  • 1/4 cup vanilla protein
  • 2 eggs
  • 3 tablespoons coconut cream
  • 2 tablespoons PBfit
  • 1 tablespoon sugar-free syrup
  • 1/3 cup almond flour
  • 2 tablespoons stevia
  • 1/2 tsp vanilla extract

Chocolate Dip

  • 1 tablespoon butter
  • 1/4 cup coconut butter
  • 2 tablespoons stevia
  • 2 tablespoons unsweetened cocoa powder


  1. Preheat the oven to 325°F and line a pan with parchment paper.
  2. In a bowl, mix together all of the macaroon ingredients with a rubber spatula.
  3. Roll dough into balls and bake for 8- 10 min vs using a pastry bag and star tip, the ball method saves time.
  4. While the macaroons are baking, begin to melt the butter, coconut cream, stevia, and cocoa powder in a saucepan.
  5. Stir and remove from heat once well combined.
  6. Allow macaroons to cool for at least half an hour before dipping them in chocolate.
