These keto peanut butter protein macaroons are a great treat when you need something sweet. Packed with healthy fat and protein without all the cheap carbohydrates found in other sweets.
Keto Peanut Butter Protein MacaroonsIngredients
- 3 cups unsweetened shredded coconut
- 1/4 cup vanilla protein
- 2 eggs
- 3 tablespoons coconut cream
- 2 tablespoons PBfit
- 1 tablespoon sugar-free syrup
- 1/3 cup almond flour
- 2 tablespoons stevia
- 1/2 tsp vanilla extract
Chocolate Dip
- 1 tablespoon butter
- 1/4 cup coconut butter
- 2 tablespoons stevia
- 2 tablespoons unsweetened cocoa powder
Instructions
- Preheat the oven to 325°F and line a pan with parchment paper.
- In a bowl, mix together all of the macaroon ingredients with a rubber spatula.
- Roll dough into balls and bake for 8- 10 min vs using a pastry bag and star tip, the ball method saves time.
- While the macaroons are baking, begin to melt the butter, coconut cream, stevia, and cocoa powder in a saucepan.
- Stir and remove from heat once well combined.
- Allow macaroons to cool for at least half an hour before dipping them in chocolate.
