Macaroon Mixture

  • 3 cups unsweetened shredded coconut
  • ¼ cup vanilla protein
  • 2 each eggs
  • 3 tbsp coconut cream
  • 2 tbsp PBfit
  • 1 tbsp sugar-free syrup
  • ⅓ cup almond flour
  • 2 tbsp stevia
  • ½ tsp vanilla extract

Chocolate Dip

  • 1 tbsp butter
  • ¼ cup coconut butter
  • 2 tbsp stevia
  • 2 tbsp unsweetened cocoa powder


  1. 1.) Preheat the oven to 325°F and line a pan with parchment paper.
    2.) In a bowl, mix together all of the macaroon ingredients with a rubber spatula.
    3.) Roll dough into balls and bake for 8- 10 min vs using a pastry bag and star tip, the ball method saves time.
    4.) While the macaroons are baking, begin to melt the butter, coconut cream, stevia, and cocoa powder in a saucepan.
    5.) Stir and remove from heat once well combined.
    6.) Allow macaroons to cool for at least half an hour before dipping them in chocolate.
