Keto Lemon Poppy Seed Muffins
This is an easy recipe for keto lemon poppy seed muffins. These are a fantastic sugar-free snack that my children love to pack in their lunch box! Made in one bowl, light, fluffy, super moist, and ready in 25 minutes!
- ⅓ cup Coconut flour
- 3 tbsp Ghee
- 4 tbsp Kefir
- 4 each Eggs
- TT Lemon extract
- 1 tbsp Poppy seeds
- 1.25 tsp Baking powder
- 1 tbsp Monk fruit
- ¼ tsp Redmonds salt
1.) Whisk egg whites.
2.) Melt ghee.
3.) Incorporate the yolks into the whisked egg whites, add the ghee, and mix.
4.) Slowly add dry ingredients. Mix well.
5.) To have a golden edge, poured batter into a 12-muffin tin.
6.) Bake at 325ºF for 21 minutes. Enjoy!
