This is a really delicious keto friendly cinnamon roll recipe! These gooey cinnamon rolls are tastier than the gluten ones, and are topped with a delicious cream cheese frosting!
They’re easy to make and can be prepared pretty quickly. These should be treated as a treat due to the higher calories.
Ingredients
- 2 cups mozzarella cheese, shredded
- 3 oz cream cheese
- 2 eggs
- 1 tsp vanilla extract
- ½ tsp vanilla-flavored liquid stevia
- ¾ cup coconut flour
- 1 tbsp baking powder
- ½ cup stevia
- 1 pinch Salt
Cinnamon Filling
- ½ cup butter, melted
- ⅓ cup stevia
- 2 tbsp cinnamon
Cream Cheese Frosting
- 3 tbsp heavy cream
- 3 oz cream cheese
- 2 tbsp stevia
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 375°F degrees and line a baking sheet with parchment paper.
- Combine the shredded mozzarella and cream cheese in a microwave-safe bowl and melt for 2 minutes.
- Add remaining dough ingredients and knead until well incorporated.
- Place the dough onto the baking sheet and top with another piece of parchment paper.
- Roll dough out until about 1/2″ thick.
- Melt the butter and mix in the stevia and cinnamon.
- Spread the mixture onto dough.
- Cut dough into 6 equal pieces and roll up and twist around into a cinnamon roll shape.
- Bake until golden brown (approximately 15-18 minutes).
- Blend all frosting ingredients until smooth.
- Remove rolls from oven and spread frosting on top.
