Maybe you know me as a health and fitness keto/ketone motivator, but I’m more known as the “chef loses 100 pounds guy”. My weight loss journey turned into a lucrative online business, and for those that didn’t know, I’m a certified chef, baker, and co-owner of Staggering Ox Franchising at the time of me writing this blog.
Staggering Ox opened in 1983 in Helena, MT. I joined them in 1993 as the kitchen manager. I helped them take this business from a low 5 figure to 7 figures.
The community loves Staggering Ox, it is a tourist destination. No two locations look the same, but the quality of food remains consistent. We’ve been featured in Maxim Magazine, Food Network TV, and Vogue to name a few.
I Used To Be 100 Pounds Overweight
I used to be 100 pounds overweight, sickly, and working in a restaurant made it challenging to exercise and eat healthily when I working 12+ hour days.
I wasn’t eating meals, because I was so busy. I lived on fountain pop and chocolate bars. I would only eat once a day, and it was at night….. I would gorge myself with massive fast food calories before bed and then be sick all night long from acid reflux….which resulted in very little sleep.
I worked out for 15+ years at the gym, but never really got any results, my weight would yo-yo 25 pounds, but I’d never keep it off. The nutritional advice I was receiving from gym rats was terrible. 20 years later these guys are “still bulking”….it’s a nice way of saying they love storing and holding onto body fat.
After decades of feeling terrible and suffering from anxiety, depression, IBS, hypothyroidism, pre-diabetes, and a multitude of other little ailments, I was desperate for help.
After watching my wife’s mom die too young from brain cancer, I knew I needed to change my health and lose weight for my children.
Low Carb And Keto Lifestyle
I started researching ketogenic and low carbohydrate nutrition and I discovered Ketosis. It just made sense that if we consume a low carbohydrate diet and find some form of daily exercise that we enjoy, we would burn our own body fat as fuel, and keep it off. This was a lifestyle change, it wasn’t a diet.

I started a fitness routine and committed to exercising 6 days a week. I substantially cut out carbohydrates and implemented intermittent fasting…. meaning I only eat between the hours of 11 AM and 7 PM.

And the cool part is earning an additional side income that is fun and rewarding, which has surpassed my restaurant career of 25+ years in just a couple years by simply helping people improve their lives, it’s such a blessing!
